Bacon and Chive Deviled Eggs
Deviled Eggs are one of those dishes that people either love or they hate.
I hope you love it.
And if you love the basic recipe that we all grew up with- then I can guarantee that you’ll love what we call “fancy deviled eggs”. And if you are on the fence about it- I hope this changes your mind about deviled eggs all together because trust me- they are dang good!
We attended an Ugly Sweater Party the other night and we needed to bring an appetizer to share.
Typically, I would have smoked some sort of meat but I wanted to do something a little lighter.
I’ve always enjoyed deviled eggs but wanted to make them fancier and tastier for this party with all our good friends. I’ll admit- I came up with this recipe on a whim but I’m actually quite pleased with how it turned out.
They were a hit and got gobbled up within the first ten minutes! So, I think it’s safe to say this will be our new tried and true way to make deviled eggs from here on out.
What Can I Serve With This
I usually associate deviled eggs with Easter dinner or a side dish to Thanksgiving or Christmas.
So that being said I would serve some of our favorite entree ideas.
Substitutions
I’m not big on substituting ingredients when it tastes SO good as it is.
But if you really want to you could swap miracle whip for mayo. Other than that just trust me when I say use all the ingredients listed below because it is the combination of them all that make this dish so amazing.
If you don’t have smoked paprika you can make your own. Just combine two parts chili powder or paprika to one part cumin.

Can I use low-fat mayo? Sure, why not!
Can I make these ahead of time? Yes, you can make them a few hours before you need them. Just be sure to keep them covered in the refrigerator.
Can I leave the bacon off? You definitely can.
What if I don’t have fresh chives? If you don’t have fresh chives or can’t get them at the store, you could sub with scallions.
Ingredients
10 eggs
1/2 cup Mayonnaise
2 Tbsp Mustard
1 Tbsp Dill Pickle Juice
1/4 tsp salt
1/4 tsp fine ground black pepper
2 Tbsp fresh chives
2 pieces Bacon
1 Tbsp Smoked Paprika
Instructions
Bring water to boil
Turn heat down and add eggs
Bring heat back up to medium high and boil for 15 minutes.
Remove and place in ice bath for 20 minutes
Peel under cold running water
Cut in half and remove yolks
In a mixing bowl, mix yolks, mayonnaise, mustard, pickle juice, salt and pepper until smooth
Place mixture in piping bag or ziploc with corner cut and pipe into eggs
Garnish with bacon, smoked paprika and fresh chives
Refrigerate, covered until ready to serve.
