Salt & Pepper to taste
Instructions
Trim large pieces of fat from the pork tenderloins
Season generously with salt and pepper
Sear in a lightly oiled pan on high until browned on all sides
Cut into 1.5 inch cubes (middle will still be raw- this is ok)
Place pork cubes in crock pot
Add Salsa Verde and Green Enchilada Sauce
Cook on Low for 6-8 hours or High for 4-5 hours (I prefer Low)
Serve garnished with cilantro and queso fresco and enjoy with your favorite tortillas and limes.
