Can I make this Taco Soup if I don’t have an Instant Pot?
You can make Taco Soup in several ways. You can combine all the ingredients in a large pot on your stove or combine and put in a crock pot. We like using the Instant Pot because you can cook your ground beef in the same pot and use less dishes.
Can I leave certain ingredients out of the recipe?
You can always leave ingredients out of Taco Soup that you don’t want. You can make it vegetarian by leaving out the beef and you can always add or omit different beans or veggies to your liking.
Along those same lines you can also add different meat to the soup if you prefer. You can use cooked shredded chicken, tofu, or pork.
Taco Soup Ingredients
- 1 lb. ground beef
- 1/4 onion- diced
- 1 Tablespoon minced garlic
- 4 tsp. olive oil
- 2 limes
- 3/4 cup Ketchup
- 2 cans black beans
- 1 can kidney beans
- 1 can corn- drained
- 28 ounce can crushed tomatoes
- 1 8 ounce can tomato sauce
- 1 bunch cilantro – chopped
- Taco Seasoning
- Garnish with sour cream, shredded cheese and avocado
How to make Taco Soup in the Instant Pot
Cook your ground beef
Set Instant Pot to saute and drizzle olive oil into the pot.
Once the olive oil is heat, add the ground beef and cook until brown.
Combine the rest of your ingredients
Add the onion and garlic and cook until soft.
Add the remaining ingredients including taco seasoning and lime juice and stir.
Set on manual to perform the heat cycle to heat soup
Put the lid on and set for manual high for seven minutes.
Once it has completed its cooking cycle, quick pressure release all the pressure.
How to Serve Taco Soup
Serve with sour cream, shredded cheese, and avocado. Sometimes we like to sprinkle more cheese on top or add guacamole. This is also good paired with corn bread or Fritos.
Can you freeze Taco Soup Leftovers?
Yes! This is the perfect soup for later. Simply place leftovers in an airtight container and remove excess air. We recommend you eat it within 3 months
How do you reheat taco soup?
If your soup has been in the refrigerator you can reheat on the stove top or microwave, stirring often until warm. If you are reheating from it being frozen then let the soup thaw over night in the refrigerator before reheating.
