Like many of you, I am a huge fan of fish tacos but I am also a huge fan of convenience.

All you have to do is open the package, throw it on the grill like I did and enjoy it any way you like.
However, fish tacos need fixins.
So below, you’ll find a recipe that will help you enjoy Cedar Bay’s salmon filets as they were intended but add some light fresh flavor to go with it.
Cedar Bay Salmon Tacos with Fresh Mango Guacamole
Ingredients
- 1 Cedar Bay Salmon Filet
- 2 Avocados
- 1 Mango
- ¼ C Red Onion, Finely diced
- ¼ C Cilantro, Chopped
- 1 Lime
- ¼ C Queso Fresco
- 1 Tbsp Kosher Salt
- Crema for finishing touch
- Tortillas
Instructions
- Preheat oven or grill to 425 degrees F.
- Place salmon and cedar plank in grill and cook for 12-15 minutes or until internal temperature reads 158 degrees F.
- While salmon is cooking combine the following for the Fresh Mango Guacamole:
- Avocados (I left them in fairly large cubes)
- Mango (cube same size as avocados)
- Diced onion
- 1-2 tsp kosher salt (to taset)
- ½ Lime squeezed
- Once Salmon has reached its target internal temperature of 158 degrees F, remove it from the grill and assemble your tacos in this order:
- Salmon, Mango Guacamole, Queso Fresco, Cilantro and Crema with an extra dash of salt and a lime as garnish.
