Hasselback Potatoes: Fancy Taters

Baked potatoes are a cheap and delicious way to fix up a potato.

But what if there were a way to bake your potato other than salted or wrapped in foil?

Welcome to Hasselback Potatoes. These are made by making several slices along the potato before cooking.

This allows the potato to cook faster and give more texture to the whole potato itself.

Hasselback Potatoes: Fancy Taters

Ingredients

  • Potatoes, as many as you need and whichever kind you can find- Russets and Golds are best
  • ¼ C Olive Oil, or more if you have several potatoes
  • 1 Garlic Clove
  • 2 Sprigs Fresh Thyme or your favorite garden herb
  • Salt Pepper

Instructions

  1. Rinse Potatoes
  2. Slice off a small lengthwise piece of the potato so that it can stand on it’s own
  3. Place potato between two cutting board or chopsticks. This prevents your knife from slicing all the way through your potato.
  4. Make several uniform slices in each potato
  5. Chop garlic and thyme and add to Olive Oil
  6. Brush with Olive Oil mixture making sure to get olive oil in between each slice
  7. Top generously with Salt and Pepper
  8. Place in smoker at 375 for 45-60 minutes or until done. Can also be cooked in the oven on a cookie sheet lined with parchment paper.
  9. Remove, let cool and dress with your favorite potato fixings or enjoy as they are.
  10. These are a great side dish to almost any meal so get creative.
