Enchiladas
More specifically- beef enchiladas. They might just be one of the easiest and quickest meals you can make that is filling and delicious.
You can make them with only a few ingredients and they’ll turn out tasting pretty dang good- or you can add in some extras.
We made this for our family the other night and our girls ate it right up which is a win in my book.
Olives, avocados, sour cream, rice- the options are limitless but today I’ll share a very simple and easy recipe for your favorite Mexican dish.
Ingredients:
10 flour tortillas
1 8 oz. package shredded cheddar cheese
20 oz. can of red enchilada sauce
1 lb . browned ground beef
1 T. taco seasoning
2 cups cooked white rice (optional)
or 1 bag steamed cauliflower rice (optional)
Olives, sour cream, avocados, lettuce, tomatoes for garnish (optional)
Instructions:
Preheat oven (or Traeger grill) to 350 degrees
On medium high heat, cook your ground beef until cooked
Drain grease from the beef
Add 1 T. taco seasoning and 1.5 C. enchilada sauce to the beef and stir together
Mix in rice or cauliflower if desired, set aside
Pour 1/4 enchilada sauce on the bottom of a 9X13 pan
Get ready to assemble your enchiladas
Take one tortilla and scoop beef mixture in tortilla
Sprinkle cheddar cheese on top of it
Fold together and place seam side down into baking dish
Once all tortillas are in the dish cover with remaining sauce and sprinkle with cheese
Place in oven for 30 minutes
Garnish with olives, sour cream, avocados, tomatoes, lettuce and enjoy!
Quick and Easy Beef Enchiladas
Ingredients

- 1 taco seasoning
- 2 cups cooked white rice, optional
- or 1 bag steamed cauliflower rice, optional
- Olives, sour cream, avocados, lettuce, tomatoes for garnish (optional)
