The Best and Easiest Pulled Pork Nachos

In our family we love simple dinners just as much as the ones that take a little more time.

One of our favorite quick dinner ideas is  Nachos.  The best thing about Nachos is that you can make them as simple or deluxe as you’d like!

We had some leftover Pork and I knew I wanted to serve it differently for my family.

Nachos + Pork are always a winning combination and we were not disappointed!

The sweet of the pork with the savory flavor of chips and beans made for a great meal that was devoured by all.

Pork Nachos

Ingredients:

2 Cups pulled or shredded pork

1-2 Cups Monterey Jack, Colby Jack or Cheddar Cheese

½ C Sliced Olives

1 small can diced green chiles

3 Roma tomatoes seeded and diced

1-2 Cups Black Beans

½-1 Cup Corn

2 jalapeño peppers seeded and diced

½ C Cotija cheese, grated

 

Instructions:

Assemble your nachos in layers using all ingredients to your taste

Cook in smoker set at 350 degrees until chips are toasted and cheese is melted.

Top with guacamole  and sour cream and enjoy.
