Chicken Wings get gobbled quicker than just about any meal we eat around here. I can’t even remember a time that there were leftovers. We love to eat them as a main dish or as an appetizer. They are the perfect snack to bring to pot-lucks or Superbowl parties, too.

Smoked Chicken Wings on the grill is an easy way to make chicken wings taste delicious. They don’t take a lot of work and they are always a hit. What makes this smoked chicken wing recipe a notch above the rest is the amazing flavors!
Chile Limon and fresh avocado make up the delicious flavors that will make your taste buds extra happy. Adding the creamy, Lime Crema is the final touch and secret to making your chicken wings taste out of this world.
What is Crema?
Crema is a thickened, creamy, flavorful sauce that you can drizzle or dollop on any Mexican inspired dish. It’s often creamy and slightly tangy. It is a more traditional Mexican condiment.
It is sometimes compared to sour cream but crema is usually runnier and a little sweeter than sour cream. You can find it at any Mexican grocer or it should be available at most grocery stores.
What are the best kind of Chicken Wings to use?
I have found that using drums and flats are the best kind of chicken wings to use. I bought a big bag of frozen wings from Costco for this recipe and they were great.
If you do use frozen chicken, be sure to put them in a covered bowl or in a ziploc bag and leave in the refrigerator over night. If they are still frozen in the morning set them on the counter top until they are completely thawed.
Smoked Chicken Wing Ingredients
Here’s what you’ll need:
- 3-4 lbs chicken wings (drums & flats)
- 2 Limes
- 5 Tbsp Chile Limón Seasoning (I used Spiceology- but you can also get other brands at Trader Joe’s or your local supermarket)
- 1-2 Tbsp Corn Starch
Avocado Crema Ingredients
- 1 Avocado
- 1 Lime
- 12 C. Fresh Mexican Table Cream
- 12 C. Cilantro
- 1 Tbsp. Hot Sauce
- 1 tsp. Salt
Supplies
- Grill
- Blendtec or blender
- Meat Thermometer
How to make Smoked Chicken Wings
For the wings you will want to add the following to a large ziploc bag and combine well:
- 3-1 lbs Chicken Wings
- Juice of the two limes
- Zest of one Lime
- 3 Tbsp Chile Limon Seasoning
-Remove as much air as possible, seal the bag and marinate in the refrigerator for 4-6 hours or overnight.
-When ready to cook, preheat your smoker to 180° F.
-Drain juice from bag and add wings to a mixing bowl.
-Add the other 2 Tbsp Chile Limón Seasoning and 1-2 Tbsp Corn Starch and mix thoroughly.
-Place on smoker and smoke for 30 minutes.
While wings are smoking, make your Avocado Crema by doing the following:
-Add avocado, Mexican Table Cream, Cilantro, zest and juice of 1 lime, hot sauce and salt into a blender.
-Blend well. I used a Blendtec but you could use a blender or anything like it. If it’s too thick, you can add milk until it reaches the consistency you’d like.
-Place in refrigerator until ready to serve.
Increase the heat on your smoker after 30 minutes
-After 30 minutes of smoking your wings, increase grill heat to High or 500° and grill wings until they reach an internal temperature of 175°F on an internal temperature thermometer. I love my meat thermometer from Thermoworks– I never grill anything without it!
-Remove wings from grill, place on serving dish and drizzle your avocado crema over your wings and garnish with chopped cilantro, fresh limes and more hot sauce.

Can Chicken Wings be reheated?
Yes! You can store them in the refrigerator in an air tight container and reheat- or they can be enjoyed cold!
Can Chicken Wings be pink?
As long as all parts of the chicken have reached an internal temperature of 165°, it is safe to eat. Be sure to always use a meat thermometer to take the guess work out of it and ensures that the chicken is cooked to the right temperature every single time.
Are Chicken Wings gluten free?
Raw chicken wings are gluten free. However, it is the sauce and seasonings used to prepare chicken wings that typically contain gluten.
Be sure to always check the ingredients you are using to make sure they are gluten free if that is what you are wanting.
