A good chuck roast will have white fat marbling throughout the cut of meat. Many people choose to buy a boneless cut, but if you prefer a bone-in roast, the bone should also appear to be a bright white color.

The chuck roast should be cooked until the internal temperature reaches 195°-205°F.
Why smoke chuck roast?
Smoking a chuck roast allows the marbled fat to break down and soften the tissue of the meat that often make roasts chewy and harder to eat.

Ingredients
- 1 2-4 lb Chuck Roast
- 1 Tbsp Mustard
- 1/2 C Beef Rub or Salt & Pepper
- 1 C Beef Broth or Water
Instructions
- Pre-heat smoker to 225°F. Rb half your mustard on roast and coast generously with rub or salt and pepper. Then flip over and repeat.
- Place roast on smoker for 4-6 hours, spritzing every 30 minutes or when roast appears to be drying out. DO NOT spritz for the first hour.
- When internal temperature reaches 165°-175°F, wrap tightly in foil and place back on smoker for 2-3 hours or until probe thermometer goes into roast like room temperature butter.
- Remove roast and let rest for a minimum of 30 minutes to an hour.
- When ready to serve, cut foil and let roast breathe for 20 minutes.
- Pull roast and enjoy.
