  • 1 2-4 lb Chuck Roast
  • 1 Tbsp Mustard
  • 1/2 C Beef Rub or Salt & Pepper
  • 1 C Beef Broth or Water


  1. Pre-heat smoker to 225°F. Rb half your mustard on roast and coast generously with rub or salt and pepper. Then flip over and repeat.
  2. Place roast on smoker for 4-6 hours, spritzing every 30 minutes or when roast appears to be drying out. DO NOT spritz for the first hour.
  3. When internal temperature reaches 165°-175°F, wrap tightly in foil and place back on smoker for 2-3 hours or until probe thermometer goes into roast like room temperature butter.
  4. Remove roast and let rest for a minimum of 30 minutes to an hour.
  5. When ready to serve, cut foil and let roast breathe for 20 minutes.
  6. Pull roast and enjoy.
